Healthy Semolina Squares (Mannik)


A few days ago my Russian friend’s mom treated me to some amazingly delicious dessert. Moist and flavorful, with nice aftertaste – needless to say, I fell in love at first bite and, of course, asked for the recipe. This dessert turned out to be a mannik (semolina cake) – a traditional Russian dessert which I, somehow, have never tried before. What a shame :)

The recipe was very simple, with just four main ingredients. I made a few changes, replacing the sour cream with Greek yogurt, reducing the amount of sugar and adding some nuts and dry fruits for more texture – and my version was not bad at all!


Semolina flour is very high in selenium, which is an important mineral that acts as an antioxidant and helps to protect cells from damage from free radicals and also helps to regulate the thyroid. By eating these healthy semolina squares you get lots of selenium as well as plant based protein – and one serving (two squares) contains only 149 calories!

Semolina flour – 1 cup
Brown sugar – 1/3 cup
Truvia baking blend – 1 tbsp *
Egg – 1
Plain greek yogurt, fat free – 1 ¼ cup
Walnut, pieces – ¼ cup
Dried cranberries – ¼ cup
Baking powder – 1 tsp

* Not a fan of stevia? Feel free to replace it with 2 tbsp of your favorite sugar or sweetener.


1. Preheat the oven to 360 F (180 C).
2. Whisk the egg with brown sugar and truvia baking blend.
3. Add the remaining ingredients, mix well.
4. Put the batter in the fridge for an hour – the semolina flour will swell and the batter will become rich and thick.
5. Put the batter into the greased baking pan (I used a 8″ square one). Bake for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean.
6. Let cool, cut into 16 pieces. Each serving includes 2 pieces. Dust with sugar powder.

Hi Simona,

You can find semolina flour in any major grocery store (in the US).
I haven’t tried this recipe with another flour. You can try but the taste will be different.
