This light streusel pudding full of energy and vitamins is a healthful way to kick-start your day. Or, you can have it as an independent dessert. It’s sweet, yummy and very satisfying – so the choice is yours!
I call it a “streusel” because my light oat pudding also has a delicious crunchy topping veiling the fruity middle. The difference is that my dessert doesn’t contain any butter, it’s low in sugar and it’s full of vitamin C and manganese.
Oh, almost forgot about calories! My healthy dessert contains half the calories a regular streusel does. Sounds pretty convincing, huh?
Fruits and berries, sliced – 1.5 cup*
Rolled oats, dry – 1/3 cup
Brown sugar – 3 tbsp
Walnuts, pieces – ¼ cup
*I used strawberries (1 ¼ cup), one medium banana and one large peach for my light oat pudding dessert.
1. In a large bowl, combine the fruits, sugar and rolled oats. Fill ramekins with the mixture. I made 3 servings – one for my hubby and two for me;)
2. For topping, combine the brown sugar and walnuts. Sprinkle over the fruit & oats mixture.
3. Bake at 375 F (190C) for 30-35 minutes, until the topping is brown and crisp. Cool for 5 minutes before serving.
