Light Ricotta Strawberry Trifle


When I want to indulge my beloved ones and myself, but do not want to spend a lot of time for cooking, I often go for this trifle dessert.

It’s made in just a few minutes and it is light and healthy – a single serving contains almost 30% of the daily recommended dose of calcium, and also vitamins A and C.

This is a win-win dessert – both delicious and healthy! Also, it’s very versatile – please see various ingredient substitutes below.


Strawberries, sliced – 1 cup*
Ricotta cheese, fat free – 1 cup
Whipping cream – 3 tbsp
Lady fingers (or any other biscuit cookies), crumbled – 3 cookies**
Sugar – 3 tsp
Mint, minced – 2-3 tbsp
Vanilla extract – 1tsp

*I also tried making this trifle with peaches, mango, raspberries, cherries – every time it came out great! Don’t limit your creativity and use any fruits and berries you like.
** Don’t have cookies on hand? Try your favorite cereal – it will also work fine☺


1. In a small bowl mix the strawberry and mint, set aside.
2. Mix the remaining ingredients, beat the mixture until is thick and smooth.
3. Put the ricotta mixture to the bottom of the mould.
Lay crumbled cookies over it.
Put another layer of ricotta mix on the top.
Lay strawberries with mint.
Add the top layer of ricotta mix.


You can serve the trifle immediately, or put it for 1-2 hours in the refrigerator before serving.
