What do you usually when you find in the fridge super ripe bananas? Yes, these usually are delicious and best for your digestion but they don’t look appealing at all, so you can’t just eat them. I usually go with this wonderful low-calorie zucchini banana bread or these super healthy pancakes containing only three ingredients. But what if next to bananas you also find in the fridge an avocado – super ripe of course 😉 Here is my quick and healthy solution – raw chocolate banana avocado mousse!
The whole “cooking” process will take only 1-2 minutes, and just in a few minutes you will be enjoying this delicious (and vegan!) dessert with creamy taste and plenty of goodness for your health. Talking about health benefits – this raw chocolate banana avocado mousse full of vitamin C and B6, as well as loaded with fiber (31% RDA per serving!).
Bananas, medium – 2
Avocado, medium – 1
Cocoa powder – 3 tbsp
Truvia baking blend – 2 tbsp ***
Vanilla extract – 1 tbsp
* Not a fan of stevia? Feel free to replace it with 4 tbsp of your favorite sugar or sweetener.
1. In a food processor, pulse all the ingredients until completely smooth.
2. Transfer mixture to serving bowls. Chill in the fridge for 10-15 minutes before serving. The mousse can be stored in a fridge for up to 3 days.
